History
Brown sugar has been produced since ancient times by incomplete crystallization of sugar cane juice. The modern distinction between light and dark brown sugar emerged in the 19th century as sugar refining became more sophisticated. The molasses content (3.5% light, 6.5% dark) distinguishes the two varieties.
